Dum Pukht

‘Dum’ implies to ‘breathe in’ while ‘Pukht’ means to ‘cook’- it’s easy to tell how tasty it’ll be from the warm and pleasant aroma that penetrates your nostril.

Dum Pukht is generally prepared using a heavy round pot alongside a handi to seal food and cooked on a slow burning fire tightly. This dish can be prepared in two different styles according to your choice; you can either choose the ‘bhunao and dum’ style or the ‘roasting’ and maturing’ style.

For both styles style of cuisine, the main recipes are the herbs and spices. Why the fire is preferred to be at a low burning rate is that the roasting can gently give off maximum flavor.

Mirchi Ka Salan

The popular and old Hyderabadi salan is prepared in a shallow wide flat bottomed handi for tight sealing. The salan is then sealed and prepared on a low for alongside with the flavors wrapped up with it to confine the whole natural taste. What more intriguing can be better than that which tastes natural?

Gosht Pasinde

Pasinde is one of the favorite dishes of the Hyderabadis as it strikes a balance between the north Indian culture and the southern. This dish derived from a mix of meat, potatoes, beans and loads of pungent spices thrown in. When it’s completely prepared tastes great. #didyouknow Samosa, one of the most loved dishes in India, is not actually Indian in origin?! 😮 . The name Samosa comes from the Persian term ‘Sanbosag’. This deep-fried/baked item is popular throughout the world but every name is derived from the same Persian term. . The dish was introduced by khansamas (royal cooks) of the Mughal kitchens. Minced meat would be cooked with spices and nuts then perfectly wrapped in pastry sheets and fried. It has come a long from being a dish fit for kings to being available at every nook and corner of a street for people to enjoy. . Every region and regional community has its own take on Samosa. Within India, the most common type of Samosa is with the spicy potato filling. In Hyderabad, Lukhmis are common which has a thicker pastry crust and minced meat stuffing. But in Bengal, you will get to enjoy Narkel er Shingara, stuffed with coconut and khoya then dipped in sugar syrup! 😍 . What’s your favourite type of Samosa? 👀 . . . #samosa #storiesofindia #incredibleindia #indianfood #foodstagram #desifood #instafood #foodtalkindia #streetfood #authenticook #deepfried #eatlocal #flavoursofindia #thursdaythoughts #funfact #lukhmi #favouritefood #goodfood #indiansnacks #foodmanicindia #traveldeeper #foodiesofindia #indianstreetfood #samosas #samosachaat #indiansnack #delicioussnack
